An elegant assemblage with a firm, silky structure and appealing salinity. Fruity, floral and spicy, this rosé champagne has an underlying freshness and acidity that gives it a compelling vibrancy. The radiant pinot noir grape gives Dom Pérignon rosé its rich, fruity tones and magnetic energy. After a less-than-promising start, 2008 yielded wonderfully mature, well-rounded fruit.

TASTING NOTES

Aroma: A bouquet of raspberries and wild strawberries to start, joined quickly by powdery and persistent notes of iris and violet. Leafy-green nuances follow – privet, angelica and camphor.

Taste: An acidic foundation – the signature of the vintage – articulates the structure of the pinot noir. Full-bodied and silky, the flavours grow bolder, softened by a sweet, floral and peppery finish.

FOOD PAIRINGS

The combination of iodine and vegetable products, weever fish, sea urchins, turnip greens, sumac or artichoke, is perfect to feel the duality of the wine, to bring out the aromatic nuances of the wine. Ingredients like sea Urchins, pork belly, kale or chilli pepper will reveal the lines of the wine: its acidity and tannic structure, hidden behind its fruit.

ORIGIN

Épernay, Champagne, France. Dom Pérignon vintages are produced using the best grapes on the estate. Each one is a unique creation with a style and an identity which are unique to its vintage: it is down to the Chef de Cave to decide if the vintage will be declared. “If the fruit we have harvested doesn’t satisfy the Dom Pérignon Champagne criteria, there will not be a vintage that year.” explains Richard Geoffroy.
