Chardonnay makes up a quarter of the total grape harvest in Australia, and the incredible diversity of vineyards – including our very own Yarra Valley, Strathbogie Ranges and Whitlands Plateau – is a gift for sparkling wine lovers. Alongside its bright, softly acidic flavours of Fuji apples, pears, nectarines and Meyer lemons, comes an aroma of fresh lime blossom and fennel.     We encourage you to pair as you wish but if you are really stuck, try scallops with cauliflower puree, a whole baked snapper with Asian herb salad and for dessert, lemon tart is always a nice match for Chandon Blanc de Blancs.
