    Aroma: The remarkable softness of the nose makes an immediate impression, warm and reassuring, subtly nuanced. A floral and mineral tonality quickly opens up to notes of heirloom pêche de vigne peaches, citron, calisson candy and mocha.

    Palate: The elegant fullness on the palate is restrained and tender at the heart. The mouthfeel firms as the complexity grows, thin-skinned and gradually saline. The ensemble ultimately melts into an exquisite bitterness and glorious maturity, with notes of dry fruit, cacao, and grilled hazelnuts.

    Dom Pérignon Vintage 2006 Plénitude 2 is distinguished by its soft, warm character, ideally expressed when paired with seafood such as langoustine and scallops. This wine pairing harmony continues with veal and Jerusalem artichoke dishes, which highlight its delicate, enveloping nature. The flavours are further enhanced by herbs such as rosemary and basil, while hints of acidity from lemon and bergamot fully reveal its breadth and refined structure.     best grapes on the estate. Each one is a unique creation with a style and an
    identity which are unique to its vintage: it is down to the Chef de Cave to
    decide if the vintage will be declared. “If the fruit we have harvested doesn’t
    satisfy the Dom Pérignon Champagne criteria, there will not be a vintage that
    year.” explains Richard Geoffroy.
